New Beginnings!

Well, it's almost spring again! We were in the field today cleaning up last years' leavings (see below right) and checking to see if any of the root vegetables that we left in the ground have come up again and we found some greenery!! The parsnips (see below left), carrots, kale (see middle below), brussel sprouts, and spinach all have little green shoots. There is just something amazing about seeing those first shoots after a long winter! These are the second year plants that will produce the seed that you will see on our shelves next spring...
