Promoting Parsnip!!

We decided that we wanted parsnips for supper the other day and so we made a trip to the garden. Yes, it is February and Yes it is Alberta and Yes we dug those parsnips that we planted from seed last spring and lo and behold they were HUGE!! The biggest one that you see in the picture measured 4 inches across at the top and they were about 20 inches long! We peeled them, cut them into cubes, cooked them in a little water on the stove, mashed them and added butter, brown sugar and nutmeg and mmmm yum! It's almost dessert but instead it is a vegetable...you can't go wrong!!

What about freezing parsnips?

I suspect you can. I haven't tried it...we leave them in the ground all winter and dig them in early spring and they are fresh that way.
